- rice noodles 400 g
- garlic 3 clove
- eggs 4
- peanuts 80 g
- bean sprouts 125 g
- spring onions ½ bunch
- lime 2
- prawns 300 g
- water 1 dl
- pad thai sauce 150 g

1Soak the rice noodles in hot, not boiling, water for 15 minutes .

2Peel and chop the garlic . Crack the eggs into a bowl, dividing them between two bowls when serving more than two people. Chop the peanuts , rinse the bean sprouts , slice the spring onions and cut the lime into wedges.

3Cook in two batches when serving more than two people. Fry half the portion at a time with half the ingredients, otherwise the noodles are hard to fry.

4Heat a good amount of oil in a wok and first fry the garlic and the prawns until the prawns take on a little colour.

5Add the noodles with water and let them soften and come together.

6Push the noodles to the side and add the eggs. Let them fry a little while stirring, then mix them through.

7Add the pad thai sauce along with the bean sprouts, saving a little for the garnish.

8Plate the noodles with the spring onions, peanuts, bean sprouts and lime wedges.
