- shelled edamame 4 oz
- roasted sesame seeds 2 tbsp

Note: If your sesame seeds are raw, toast them first for the best flavor. Heat a dry frying pan over medium heat. After a minute or two, add the sesame seeds and toast for 2 to 4 minutes, shaking the pan occasionally, until golden brown. Or, add to a rimmed sheet pan and toast in a 350ΒΊF / 175ΒΊC oven for 6 to 8 minutes.

This salad is best fresh; only make as much as you can eat.

Nutrition boost: Top your salad with shredded carrots, shredded cabbage, or thinly sliced cucumber. For more protein, top with more edamame, chopped peanuts, and/or cashews.

1Peel the mandarins , then chop the segments into bite-sized pieces.

2Add the butter lettuce to a large bowl , tearing into small pieces with your hands.

3Toss the lettuce with best-quality extra virgin olive oil and best-quality vinegar in about a 2:1 ratio until well-dressed to your liking. Season with a pinch or two of kosher salt and freshly cracked black pepper .

4Add the citrus pieces, shelled edamame , and roasted sesame seeds . Toss again, and season to taste with more salt and pepper as desired.
