Add the @butter lettuce{5%oz}(140g; or spring mix or "protein" salad greens) to a large #bowl{}, tearing into small pieces with your hands. Toss the lettuce with best-quality @extra virgin olive oil{} and best-quality @vinegar{}(any kind works!) in about a 2:1 ratio until well-dressed to your liking. Season with a pinch or two of @kosher salt{} and @freshly cracked black pepper{}. Add the citrus pieces, @shelled edamame{4%oz}(115g), and @roasted sesame seeds{2%tbsp}(18g; see Note). Toss again, and season to taste with more salt and pepper as desired. > Note: If your sesame seeds are raw, toast them first for the best flavor. Heat a dry frying pan over medium heat. After a minute or two, add the sesame seeds and toast for 2 to 4 minutes, shaking the pan occasionally, until golden brown.
