- walnuts or pistachios ΒΌ cup
- celery ribs 4-5
- flat-leaf parsley leaves no stems 1 handful
- heads Little Gem lettuce or seasonal lettuce of choice 3 oz
- juicy fresh fruit e.g., of chopped pineapple or medium orange 1 handful
- good-quality extra virgin olive oil 1.5-2 tbsp
- medium oranges Β½
- medium lime 1

The exact amount of juicy fresh fruit you use will depend on your preference. Taste the salad, then add more fruit as desired. Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: Add on chopped avocado for healthy fats, or sprinkle in hemp seeds for protein.

1Gather: walnuts or pistachios , celery ribs , flat-leaf parsley leaves no stems , heads Little Gem lettuce or seasonal lettuce of choice , juicy fresh fruit e.g., of chopped pineapple or medium orange , good-quality extra virgin olive oil , medium oranges , medium lime , Kosher salt and freshly cracked black pepper.

2If the nuts are raw, toast them first for the best flavor. Add to a dry frying pan over medium or medium-low heat and toss, stirring occasionally, until nutty in aroma and lightly browned. Chop the nuts or break into pieces with your hands.

3Prep the other ingredients. Herbs: Tear the celery leaves and parsley leaves into small pieces with your hands. Lettuce: Chop finely or tear into small pieces. Fruit: For pineapple, peel as necessary and cut into thin slivers. For oranges, peel and thinly slice the segments (or chop).

4In a mixing bowl, combine the chopped celery, celery leaves, parsley leaves, and chopped lettuce.

5When ready to serve, add 1 1/2 tbsp olive oil, 1 tbsp orange juice, 1 tbsp lime juice, and a pinch of salt and pepper, and toss to coat. Taste, adding another 1/2 tbsp olive oil to balance the acidity, or more orange/lime juice as desired. Add the fruit and nuts, gently toss, and season with more salt and pepper as needed.
