If the nuts are raw, toast them first for the best flavor. Add to a dry frying pan over medium or medium-low heat and toss, stirring occasionally, until nutty in aroma and lightly browned. Chop the nuts or break into pieces with your hands. Prep the other ingredients. Herbs: Tear the celery leaves and parsley leaves into small pieces with your hands. Lettuce: Chop finely or tear into small pieces. Fruit: For pineapple, peel as necessary and cut into thin slivers. For oranges, peel and thinly slice the segments (or chop). In a mixing bowl, combine the chopped celery, celery leaves, parsley leaves, and chopped lettuce. When ready to serve, add 1 1/2 tbsp olive oil, 1 tbsp orange juice, 1 tbsp lime juice, and a pinch of salt and pepper, and toss to coat. Taste, adding another 1/2 tbsp olive oil to balance the acidity, or more orange/lime juice as desired.
