If your sunflower seeds are salted, reduce the salt by half.

2Line a sheet pan with parchment paper. (If you haven’t already, arrange a rack in the middle of the oven and preheat to 350ºF / 175ºC.)

3In a bowl, combine the pepitas, sunflower seeds, oil, salt, and a generous amount of pepper, tossing well to coat. Taste a seed, adding more salt as desired. Spread out on the lined sheet pan. Roast in the oven for 8-12 minutes , tossing or stirring halfway through, until toasty and golden brown.

4Carefully transfer the parchment paper to a flat surface to cool. Once cool, funnel the seed mix into a labeled airtight container or jar and seal. Store in the pantry for 1 to 2 weeks.
