  • allspice ½ tsp
  • fennel ½ tsp
  • nutmeg ½ tsp
  • garlic powder ½ tsp
  • black pepper ½ tsp
  • cayenne pepper ½ tsp
  • ginger powder ½ tsp
  • red chili pepper ½ tsp
  • gochugaru 0.12 tsp
  • white pepper powder 0.12 tsp
  • bay leaf 1

This recipe with just the required spices will yield roughly 6 Tbsp of curry powder. This curry powder is unsalted—taste your dish and add salt as needed while cooking. When using whole spices, see endnotes.

    Combine turmeric , coriander , cumin , cloves , cardamom , cinnamon powder , fenugreek seeds , paprika , allspice , fennel , nutmeg , garlic powder , black pepper , cayenne pepper , ginger powder , red chili pepper , gochugaru , white pepper powder , and bay leaf in a glass jar .
