Zucchini loaf
🥘 Ingredients
- zucchini 1 kg
- onion 1
- salt
- pepper
- cumin seeds
- coriander seeds
- parsley 50 g
- eggs 2
- parmesan 75 g

1Sauté the zucchini in olive oil with the onion over low heat.

2Season generously ( salt , pepper , cumin seeds , coriander seeds ).

3Cover and reduce to evaporate the liquid.

4Add a large amount of parsley .

5Roughly blend and stir in the eggs beaten together with the grated parmesan .

6Pour into a loaf tin and bake in a bain-marie for 1 hour .
