Zucchini loaf

🥘 Ingredients

  • zucchini 1 kg
  • onion 1
  • salt
  • pepper
  • cumin seeds
  • coriander seeds
  • parsley 50 g
  • eggs 2
  • parmesan 75 g

    Sauté the zucchini in olive oil with the onion over low heat.

    Season generously ( salt , pepper , cumin seeds , coriander seeds ).

    Cover and reduce to evaporate the liquid.
  4. 4
    Add a large amount of parsley .
  5. 5
    Roughly blend and stir in the eggs beaten together with the grated parmesan .
  6. 6
    Pour into a loaf tin and bake in a bain-marie for 1 hour .
