  • rice noodles 8 oz
  • tamarind paste 2 tbsp
  • fish sauce 2 tbsp
  • palm sugar 1 tbsp
  • lime juice 1 tbsp
  • vegetable oil 1 tbsp
  • garlic cloves 2
  • shrimp 200 g
  • eggs 2
  • bean sprouts 1 cup
  • green onions 3
  • peanuts ΒΌ cup

    Soak rice noodles in warm water for 30 minutes until pliable. Drain. Mix tamarind paste , fish sauce , palm sugar , and lime juice to make the sauce. Heat vegetable oil in a wok over high heat. Saute garlic cloves for 30 seconds . Add shrimp , cook 2 minutes until pink. Push to the side. Crack eggs into the wok, scramble them. Add noodles and sauce, toss everything together for 2 minutes . Add bean sprouts and sliced green onions , toss for 30 seconds . Serve topped with crushed peanuts and a lime wedge.
