- rice noodles 8 oz
- tamarind paste 2 tbsp
- fish sauce 2 tbsp
- palm sugar 1 tbsp
- lime juice 1 tbsp
- vegetable oil 1 tbsp
- garlic cloves 2
- shrimp 200 g
- eggs 2
- bean sprouts 1 cup
- green onions 3
- peanuts ΒΌ cup

1Soak rice noodles in warm water for 30 minutes until pliable. Drain. Mix tamarind paste , fish sauce , palm sugar , and lime juice to make the sauce. Heat vegetable oil in a wok over high heat. Saute garlic cloves for 30 seconds . Add shrimp , cook 2 minutes until pink. Push to the side. Crack eggs into the wok, scramble them. Add noodles and sauce, toss everything together for 2 minutes . Add bean sprouts and sliced green onions , toss for 30 seconds . Serve topped with crushed peanuts and a lime wedge.
