🥘 Ingredients

- tomato paste 1 tbsp
- garlic 2 cloves
- italian seasoning ½ tbsp
- dried oregano ½ tsp
- onion powder ½ tsp
- paprika ½ tsp
- sun-dried tomatoes ¼ cup
- zucchini and bell pepper ½ cup
- tofu ½ block
- pasta 2 cups
- vegetable broth 1 ¼ cups
- coconut milk ½ can
- salt ½ tsp
- pepper ¼ tsp
- chili flakes ½ tsp
- spinach 1 cup
- vegan mozzarella ½ cup

1Preheat your oven to 400°F (200°C). Add olive oil , tomato paste , garlic , italian seasoning , dried oregano , onion powder , paprika , sun-dried tomatoes , zucchini and bell pepper , tofu , pasta , vegetable broth , coconut milk , salt , pepper , chili flakes to a large baking dish , stir well so the pasta and tofu are fully coated.

2Cover tightly with foil/lid and bake for 35 minutes|45%minutes , until the pasta is tender and most of the liquid is absorbed.

3Remove from the oven, stir in spinach , and sprinkle vegan mozzarella on top. Return to the oven uncovered for 5 minutes|10%minutes , until golden and bubbly.
