- leek tops 1 cup, sliced
- water 1 cup
- olive oil 1 tbsp
- salt ΒΌ tsp

1Thinly slice the green leek tops and transfer to a bowl . Add leek tops and water to cover. Agitate and let rest for 5 minutes .

2Using your hand or a slotted spoon scoop them out and transfer them to a towel to pat dry.

3Preheat a pan to medium heat and add olive oil . Shallow fry the leek tops for 5 minutes|7%minutes until slightly browned. Transfer to a plate and season immediately with salt . Use them as a salad topper or garnish a fillet of fish, or in a compound butter.
