Add @leek tops{1%cup, sliced} and @water{1%cup} to cover. Agitate and let rest for ~{5%minutes}. Using your hand or a slotted spoon scoop them out and transfer them to a towel to pat dry. Preheat a #pan{} to medium heat and add @olive oil{1%tbsp}. Shallow fry the leek tops for ~{5%minutes|7%minutes} until slightly browned.
