Tofu Skin Roast Chicken

🥘 Ingredients

  • vegetable stuffing 1 cup
  • nuts ¼ cup
  • dried fruit ¼ cup
  • tofu skin sheets 6 sheets
  • rice paper sheets 3 sheets
  • vg chicken seasoning 1 tbsp
  • garlic powder 1 tsp
  • smoked paprika ½ tsp
  • white pepper ½ tsp
  • dried mixed herbs 2 tsp
  • nutritional yeast 2 tbsp
  • soy sauce 1 tbsp
  • olive oil 1 tbsp

    Hydrate the vegetable stuffing until pliable, then let it firm up before rolling into a log. If you feel fancy, fold in nuts and dried fruit to add texture and sweetness.

    Hydrate the tofu skin sheets , drain and pat dry, then wrap around the stuffing log to form a tight roulade. If you wrap one sheet at a time you will get a tighter more even roll.

    Preheat your oven to 375°F. Hydrate the rice paper sheets , wrap them around the stuffed log to form a thin coat on the outside; place the log on a baking sheet to bake. Dust with the seasoning mix: vg chicken seasoning , garlic powder , smoked paprika , white pepper , dried mixed herbs , nutritional yeast . Drizzle on soy sauce and olive oil to help the coating cling. Bake until crispy, turning once and applying more seasoning as the log cooks. Bake for 45 minutes .

    Let rest for 5 minutes before slicing; serve with gravy.
