One-Pan Bake Nourish Bowl

  • plain coconut yogurt 1 cup
  • harissa paste 1 tbsp
  • hulled tahini 2 tbsp
  • salt 1 pinch
  • lemon juice ½ lemon
  • garlic powder 1 tsp
  • sweet paprika 2 tsp
  • cumin powder 1 tsp
  • onion powder 1 tsp
  • garlic powder 1 tsp
  • dried parsley 2 tsp
  • salt 1 pinch
  • black pepper 1 pinch
  • butter beans 420 g
  • cauliflower 1 head
  • red onion 1 red onion
  • olive oil 2 tbsp
  • parsley 2 tbsp
  • mint 2 tbsp
  • pomegranate 2 tbsp
  • sesame seeds 1 tbsp

    Preheat your oven to 200°C/400°F. In a bowl , whisk together plain coconut yogurt , harissa paste , hulled tahini , salt , lemon juice , and garlic powder until smooth.

    In a separate bowl , mix sweet paprika , cumin powder , onion powder , garlic powder , dried parsley , and salt , black pepper . On a baking pan lined with parchment paper, spread butter beans , cauliflower , and red onion cut into florets. Drizzle with olive oil and sprinkle over the seasoning. Toss to coat.

    Bake for 40 minutes , tossing around the 30 minute mark.

    To serve, spoon the harissa yogurt into the base of the bowls, then top with the roasted veg and butter beans. Sprinkle with parsley , mint , pomegranate , and sesame seeds .
