- plain coconut yogurt 1 cup
- harissa paste 1 tbsp
- hulled tahini 2 tbsp
- salt 1 pinch
- lemon juice ½ lemon
- garlic powder 1 tsp
- sweet paprika 2 tsp
- cumin powder 1 tsp
- onion powder 1 tsp
- garlic powder 1 tsp
- dried parsley 2 tsp
- salt 1 pinch
- black pepper 1 pinch
- butter beans 420 g
- cauliflower 1 head
- red onion 1 red onion
- olive oil 2 tbsp
- parsley 2 tbsp
- mint 2 tbsp
- pomegranate 2 tbsp
- sesame seeds 1 tbsp

1Preheat your oven to 200°C/400°F. In a bowl , whisk together plain coconut yogurt , harissa paste , hulled tahini , salt , lemon juice , and garlic powder until smooth.

2In a separate bowl , mix sweet paprika , cumin powder , onion powder , garlic powder , dried parsley , and salt , black pepper . On a baking pan lined with parchment paper, spread butter beans , cauliflower , and red onion cut into florets. Drizzle with olive oil and sprinkle over the seasoning. Toss to coat.

3Bake for 40 minutes , tossing around the 30 minute mark.

4To serve, spoon the harissa yogurt into the base of the bowls, then top with the roasted veg and butter beans. Sprinkle with parsley , mint , pomegranate , and sesame seeds .
