  • corn flour 1 tbsp

  • noodles 2 servings
  • carrot 1 piece
  • cucumber 1 piece
  • avocado 1 piece
  • edamame beans 150 g
  • green onions 2 stalks
  • oil 1 tbsp

  • soy sauce 2 tbsp
  • mirin 1 tbsp
  • maple syrup 1 ½ tbsp
  • sesame seeds 1 tbsp
  • corn flour 1 tsp
  • water ½ tbsp
  • noodles 2 servings
  • edamame beans 150 g
  • avocado 1 piece
  • carrot 1 piece
  • cucumber 1 piece
  • sesame seeds ½ tbsp
  • green onions 2 stalks

    Dice tofu into cubes. In a bowl , toss the tofu with corn flour and pepper to coat. Set aside. Bring a pot of water to a boil and cook noodles according to package instructions. Slice carrot thinly and cucumber thinly; slice avocado . Boil edamame beans until tender. Slice green onions for topping later.

    Heat oil in a frying pan over high heat. Add the coated tofu and cook until golden all over, 6 minutes . While the tofu cooks, whisk together soy sauce , mirin , maple syrup , sesame seeds , corn flour , and water in a bowl and set aside. When the tofu is golden, pour in the sauce and toss to coat as it bubbles, then turn heat to low and cook for 2 minutes .

    Divide noodles among bowl and top with the tofu, edamame beans , avocado , carrot , cucumber , and finish with sesame seeds and green onions .
