🥘 Ingredients
- tofu 350 g
- corn flour 1 tbsp
- pepper ¼ tsp
- noodles 2 servings
- carrot 1 piece
- cucumber 1 piece
- avocado 1 piece
- edamame beans 150 g
- green onions 2 stalks
- oil 1 tbsp
- tofu
- soy sauce 2 tbsp
- mirin 1 tbsp
- maple syrup 1 ½ tbsp
- sesame seeds 1 tbsp
- corn flour 1 tsp
- water ½ tbsp
- noodles 2 servings
- edamame beans 150 g
- avocado 1 piece
- carrot 1 piece
- cucumber 1 piece
- sesame seeds ½ tbsp
- green onions 2 stalks

1Dice tofu into cubes. In a bowl , toss the tofu with corn flour and pepper to coat. Set aside. Bring a pot of water to a boil and cook noodles according to package instructions. Slice carrot thinly and cucumber thinly; slice avocado . Boil edamame beans until tender. Slice green onions for topping later.

2Heat oil in a frying pan over high heat. Add the coated tofu and cook until golden all over, 6 minutes . While the tofu cooks, whisk together soy sauce , mirin , maple syrup , sesame seeds , corn flour , and water in a bowl and set aside. When the tofu is golden, pour in the sauce and toss to coat as it bubbles, then turn heat to low and cook for 2 minutes .

3Divide noodles among bowl and top with the tofu, edamame beans , avocado , carrot , cucumber , and finish with sesame seeds and green onions .
