🥘 Ingredients

  • hemp seeds ¼ cup
  • coconut milk 1 can
  • tapioca flour 1 tbsp
  • nutritional yeast 1 tbsp
  • penne pasta 150 g, boiled
  • tofu 280 g, extra firm
  • smoked paprika 1 tbsp, for tofu
  • onion salt 1 tsp
  • olive oil 1 tbsp
  • oyster mushrooms 2-3 pcs
  • mild jerk marinade 2-3 tbsp
  • smoked paprika 1 tsp, for aromatics
  • onion 1 pcs
  • garlic 2 cloves
  • thyme 2 sprigs
  • tofu 280 g, baked
  • mixed bell peppers 1 ½ peppers
  • tomato ½ tomato, diced
  • penne pasta 150 g, boiled

    Blend the cream: hemp seeds , coconut milk , tapioca flour , nutritional yeast = silky magic.

    Boil the pasta: cook according to packet instructions, reserve some pasta water, then drain & set aside. Add penne pasta .

    Tofu: tofu is seasoned with smoked paprika and onion salt , tossed in olive oil , and baked at 200°C for 20 mins.

    Mushrooms: oyster mushrooms sautéed in mild jerk marinade until reduced and golden. Add aromatics: smoked paprika , onion , garlic , thyme .

    Add baked tofu: toss tofu in to soak up the flavor.

    Add bell peppers: mixed bell peppers , tomato – cook until softened and vibrant.

    Pour in the cream: stir, simmer, and add a splash of pasta water to loosen the sauce.

    Season to taste: salt and pepper as needed.

    Toss in the pasta: penne pasta and mix well until creamy, coated, and full of bold flavor.
