Boil the pasta: cook according to packet instructions, reserve some pasta water, then drain & set aside. Add @penne pasta{150%g, boiled}. Tofu: @tofu{280%g, extra firm} is seasoned with @smoked paprika{1%tbsp, for tofu} and @onion salt{1%tsp}, tossed in @olive oil{1%tbsp}, and baked at 200°C for 20 mins. Mushrooms: @oyster mushrooms{2-3%pcs} sautéed in @mild jerk marinade{2-3%tbsp} until reduced and golden. Add aromatics: @smoked paprika{1%tsp, for aromatics}, @onion{1%pcs}, @garlic{2%cloves}, @thyme{2%sprigs}. Add baked tofu: toss @tofu{280%g, baked} in to soak up the flavor. Add bell peppers: @mixed bell peppers{1.5%peppers}, @tomato{0.5%tomato, diced} – cook until softened and vibrant. Pour in the cream: stir, simmer, and add a splash of pasta water to loosen the sauce. Season to taste: salt and pepper as needed. Toss in the pasta: @penne pasta{150%g, boiled} and mix well until creamy, coated, and full of bold flavor.
