gnocchi, sundried tomato & white bean soup

🥘 Ingredients

  • olive oil 1 tbsp
  • onion 1 large
  • carrots 2 medium-large
  • celery 3-4 stalks
  • garlic 4-5 cloves
  • italian seasoning 1 tbsp
  • salt ½ tsp
  • pepper ¼ tsp
  • vegetable stock 5 cups
  • gnocchi 500 g
  • cannellini beans 1 can
  • greens 2 ½ cups
  • cilantro ¾ cup
  • coconut milk ¾ cup
  • sundried tomatoes ½ cup

    Prepare your veggies by dicing the onion, finely chopping the carrots and celery, and mincing the garlic.

    To a large pot on medium heat, add olive oil , then throw in onion , carrots , and celery and sauté for a few minutes. Add in garlic , italian seasoning , salt , and pepper and stir well, cooking for another few minutes.

    Add in vegetable stock , then cover and bring to a simmer.

    Once simmering, add gnocchi . Next, add in cannellini beans , drained and rinsed.

    Roughly chop greens and cilantro and add them in, covering for 2 minutes to soften.

    Finally, add in coconut milk and sundried tomatoes and stir well.

    Serve immediately and enjoy.
