🥘 Ingredients
- olive oil 1 tbsp
- onion 1 large
- carrots 2 medium-large
- celery 3-4 stalks
- garlic 4-5 cloves
- italian seasoning 1 tbsp
- salt ½ tsp
- pepper ¼ tsp
- vegetable stock 5 cups
- gnocchi 500 g
- cannellini beans 1 can
- greens 2 ½ cups
- cilantro ¾ cup
- coconut milk ¾ cup
- sundried tomatoes ½ cup

1Prepare your veggies by dicing the onion, finely chopping the carrots and celery, and mincing the garlic.

2To a large pot on medium heat, add olive oil , then throw in onion , carrots , and celery and sauté for a few minutes. Add in garlic , italian seasoning , salt , and pepper and stir well, cooking for another few minutes.

3Add in vegetable stock , then cover and bring to a simmer.

4Once simmering, add gnocchi . Next, add in cannellini beans , drained and rinsed.

5Roughly chop greens and cilantro and add them in, covering for 2 minutes to soften.

6Finally, add in coconut milk and sundried tomatoes and stir well.

7Serve immediately and enjoy.
