To a #large pot{} on medium heat, add @olive oil{1%tbsp}, then throw in @onion{1%large}, @carrots{2%medium-large}, and @celery{3-4%stalks} and sauté for a few minutes. Add in @garlic{4-5%cloves}, @italian seasoning{1%tbsp}, @salt{1/2%tsp}, and @pepper{1/4%tsp} and stir well, cooking for another few minutes. Add in @vegetable stock{5%cups}, then cover and bring to a simmer. Once simmering, add @gnocchi{500%g}. Next, add in @cannellini beans{1%can}, drained and rinsed. Roughly chop @greens{2.5%cups} and @cilantro{0.75%cup} and add them in, covering for ~{2%minutes} to soften. Finally, add in @coconut milk{0.75%cup} and @sundried tomatoes{0.5%cup} and stir well. Serve immediately and enjoy.
