  • black pepper 1 tsp
  • cashews ½ cup
  • water ¾ cup
  • vegetable stock 2 cups
  • buffalo sauce 1 tbsp

    Preheat your oven to 425°F. On a sheet pan , toss cauliflower and garlic with olive oil , salt , and black pepper . Spread in a single layer and roast until tender and edges caramelized, 25 minutes .

    In a blender , blend cashews with water until smooth, forming a creamy cashew sauce, 2 minutes .

    Transfer the roasted cauliflower and garlic to a stock pot , add vegetable stock , buffalo sauce , and the cashew cream. Simmer for 15 minutes until flavors meld and the soup is heated through.
