- mini bell peppers 8 count
- ricotta Β½ cup
- cream cheese Β½ cup
- parsley 2 tbsp
- chives 1 tbsp
- olive oil 1 tbsp

1Preheat your oven to 400Β°F. Halve the mini bell peppers lengthwise and remove seeds, then arrange the hollowed halves on a baking sheet lined with parchment paper.

2In a bowl, combine ricotta and cream cheese until smooth, then fold in parsley and chives .

3Spoon the filling into each pepper half until evenly filled, then arrange on the lined sheet. Drizzle olive oil over the stuffed peppers. Bake for 12 minutes until peppers are tender and the filling is warmed through.
