Matcha Earl Grey Tiramisu

🥘 Ingredients
- granulated sugar 80 g
- earl grey tea bags 3 bags
- egg yolks 3 yolks
- vanilla extract 1 tsp
- salt ¼ tsp
- mascarpone 230 g
- heavy cream 300 g
- matcha powder 7 g
- warm water 70 g
- granulated sugar 2 tsp
- ladyfingers 1 pack
- matcha powder ¼ tsp
- matcha powder ¼ tsp

1In a blender, blitz granulated sugar and earl grey tea bags until fine powder. Add this powder to egg yolks and place the bowl over a double boiler (the bottom of the bowl shouldn't touch the water). Whisk until doubled in size. Add vanilla extract and salt and set aside.

2To another bowl, add mascarpone and heavy cream . Whip until medium peaks form (do not over-whip otherwise it will become grainy).

3Add the egg yolk mixture to the cream and gently fold until incorporated.

4Matcha soak: Sift matcha powder and whisk with warm water and granulated sugar .

5Assembly: Dip each ladyfingers into the matcha soak and cover the bottom layer of the baking dish . Optionally dust a layer of matcha powder before layering the cream. Add half of the cream mixture and spread evenly over using a spatula. Repeat steps 1-2 once more. Chill for 5 hours|overnight . Before serving, dust with matcha powder and enjoy.
