Add this powder to @egg yolks{3%yolks} and place the bowl over a double boiler (the bottom of the bowl shouldn't touch the water). Whisk until doubled in size. Add @vanilla extract{1%tsp} and @salt{0.25%tsp} and set aside. To another bowl, add @mascarpone{230%g} and @heavy cream{300%g}. Whip until medium peaks form (do not over-whip otherwise it will become grainy). Add the egg yolk mixture to the cream and gently fold until incorporated. Matcha soak: Sift @matcha powder{7%g} and whisk with @warm water{70%g} and @granulated sugar{2%tsp}. Assembly: Dip each @ladyfingers{1%pack} into the matcha soak and cover the bottom layer of the #baking dish{}. Optionally dust a layer of @matcha powder{0.25%tsp} before layering the cream. Add half of the cream mixture and spread evenly over using a spatula. Repeat steps 1-2 once more. Chill for ~{5%hours|overnight}. Before serving, dust with @matcha powder{0.25%tsp} and enjoy.
