Crispy Rice Omelette

  • cooked rice 1 ½ cups
  • kecap manis 1 tbsp
  • eggs 4 large
  • salt ¼ tsp
  • black pepper ¼ tsp
  • cheddar cheese ½ cup, shredded
  • green onions 2 stalks

    Heat vegetable oil in a nonstick skillet over medium heat. Add cooked rice and spread into an even layer, frying until the edges are crisp and golden, about 4 minutes , stirring occasionally to prevent sticking. Drizzle in kecap manis and continue to fry for 1 minutes longer to glaze the rice.

    Meanwhile, whisk eggs with salt and black pepper until just combined. Reduce the heat to medium-low and pour the eggs over the crisped rice in the skillet. Cook until the eggs are mostly set, about 3 minutes . Sprinkle cheddar cheese over the surface and cover the pan for 1 minutes to melt.
