1Combine yolks of eggs , brown sugar , salt and whisk until smooth. Add purre of mango Heat to 70Β°C heavy cream Temper into egg mixture Strain and sit for 20 minutes Cook Sous vide at 80Β°C for 1 hour . Chill in ice bath and put in fridge
