- softened butter 1 tablespoon
- Pullman bread 2 units, thick slices
- mustard 2 teaspoons
- Cheddar cheese 4 ounces, grated
- Serrano chile 1 unit, finely sliced
- cilantro 2 tablespoons, only leaves - washed and chopped
- red onion 1 tablespoon, minced
- eggs 2 units
- salt 1 pinch
- pepper 1 pinch
- ketchup

1Butter (with softened butter ) the Pullman bread on both sides, and lightly brown in a frying pan (use the pan you like most for frying eggs).

2Smear one side of the toasts with mustard , and transfer to a sheet pan , mustard-side up.

3Turn on the broiler .

4In a medium bowl, mix together Cheddar cheese , a Serrano chile , cilantro and red onion , then split evenly between the toasts.

5Place under the broiler just until the cheese is melted.

6While the cheese is melting, fry the eggs in the same pan you used to make the toast, until the white edges are crisp, but the yolks are still soft.

7Gently loosen the eggs from the pan, and slide one on top of each toast.

8Season with salt and pepper , and serve with ketchup on the side, if you like.
