  • water 1 litre
  • kombu 1 piece
  • bonito flakes 1 handful

    Bring water to the boil, then remove from heat
  2. 2
    Add the kombu and let steep for 40 mins
  3. 3
    Remove the kombu and heat the water back up to 80deg (small bubbles on the bottom of the pan)
  4. 4
    Remove from heat, add bonito flakes , stir and let steep for 5 mins
  5. 5
    Strain and use/store
