π₯ Ingredients
- water 1 litre
- kombu 1 piece
- bonito flakes 1 handful

1Bring water to the boil, then remove from heat

2Add the kombu and let steep for 40 mins

3Remove the kombu and heat the water back up to 80deg (small bubbles on the bottom of the pan)

4Remove from heat, add bonito flakes , stir and let steep for 5 mins

5Strain and use/store
