- spinach 500 gr
- garlic 2 cloves // crudely minced
- leek 4 cm (whites only) // crudely minced
- salt 2 tsp
- chicken powder 1 tsp
- light soy sauce 1 tbsp
- Chinkiang vinegar 2 tsp
- sesame oil 1Β½ tsp
- hot chili oil 2 tsp
- sesame seeds 2 tsp

1Wash the spinach . Crudely mince the garlic and leek . Boil water in a pot and add 1 tsp salt and spinach. Blanche for about 1-2 minutes until it has just wilted. Remove spinach, immediately rinse with cold water to stop boiling. With your hands, squeeze out the water from the spinach and add the garlic and spring onion. Add chicken powder , light soy sauce , Chinkiang vinegar , sesame oil , hot chili oil and 1 tsp salt. Stir very well and add sesame seeds . Take a cup and press everything in, then turn the cup upside on a serving plate and garnish for presentation. Serve with steamed white rice and other dishes.
