🥘 Ingredients
- fusilli pasta ½ lb
- tomatoes 1 lb
- Kalamata olives ¾ cup
- feta 1 lb
- sun-dried tomatoes 6
- sun-dried tomatoes 5
- red wine vinegar 2 Tbsp
- olive oil 6 Tbsp
- garlic 1 clove
- capers 1 tsp
- salt 1 tsp
- pepper ¾ tsp
- Parmesan 1 cup
- parsley 1 cup

1Cook the fusilli pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes , or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes , Kalamata olives , feta and chopped sun-dried tomatoes .

2For the dressing, combine the sun-dried tomatoes , red wine vinegar , olive oil , garlic , capers , salt and pepper in a food processor until almost smooth.

3Pour the dressing over the pasta, sprinkle with the Parmesan and parsley , and toss well.
