Tomato Feta Pasta Salad

🥘 Ingredients

  • fusilli pasta ½ lb
  • tomatoes 1 lb
  • Kalamata olives ¾ cup
  • feta 1 lb
  • sun-dried tomatoes 6
  • sun-dried tomatoes 5
  • red wine vinegar 2 Tbsp
  • olive oil 6 Tbsp
  • garlic 1 clove
  • capers 1 tsp
  • salt 1 tsp
  • pepper ¾ tsp
  • Parmesan 1 cup
  • parsley 1 cup

  • large pot

    Cook the fusilli pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes , or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes , Kalamata olives , feta and chopped sun-dried tomatoes .

    For the dressing, combine the sun-dried tomatoes , red wine vinegar , olive oil , garlic , capers , salt and pepper in a food processor until almost smooth.

    Pour the dressing over the pasta, sprinkle with the Parmesan and parsley , and toss well.
