- yellow potatoes 1 ½ lbs
- olive oil ½ cup
- chicken broth 1 cup
- salt 2 tsp
- oregano 2 tsp
- paprika 1 tsp
- pepper ½ tsp
- lemon juice 1
- rosemary 1 sprig
- parsley (optional)

1Preheat oven to 400° F or 375°F if using convection.

2Mix yellow potatoes , olive oil , chicken broth , salt , oregano , paprika , pepper , lemon juice , and rosemary in a 9x13" casserole or baking dish . Roast for 1 hour , gently stirring 2 to 3 times toward the end. After 1 hour, (or when they look 95% golden, turn off the oven and let them sit in the oven, turned off for 15 minutes.
