Greek Style Lemon Roasted Potatoes

🥘 Ingredients

  • yellow potatoes 1 ½ lbs
  • olive oil ½ cup
  • chicken broth 1 cup
  • salt 2 tsp
  • oregano 2 tsp
  • paprika 1 tsp
  • pepper ½ tsp
  • lemon juice 1
  • rosemary 1 sprig
  • parsley (optional)

  • 9x13" casserole or baking dish

    Preheat oven to 400° F or 375°F if using convection.

    Mix yellow potatoes , olive oil , chicken broth , salt , oregano , paprika , pepper , lemon juice , and rosemary in a 9x13" casserole or baking dish . Roast for 1 hour , gently stirring 2 to 3 times toward the end. After 1 hour, (or when they look 95% golden, turn off the oven and let them sit in the oven, turned off for 15 minutes.
