Cauliflower Purée with Thyme

🥘 Ingredients

  • vegetable broth 1 cup
  • salt 1 tsp
  • cauliflower 2 lbs
  • strainer
  • butter 1 ½ Tbsp
  • pepper
  • thyme 1 tsp

🍳 Cookware

  • large pot
  • slotted spoon
  • food processor

    In a large pot , bring the vegetable broth and salt to a boil. Add the cauliflower ; bring back to a boil. Cover, reduce the heat to low and steam for 15 to 20 minutes , or until cauliflower is very tender.

    Strain the cauliflower using a strainer then use a slotted spoon to transfer the cauliflower to a food processor . Add 3 tablespoons of vegetable broth from the pot, along with the butter . Process until smooth.

    Taste and adjust seasoning with salt and freshly ground pepper . Add thyme and process until just combined.
