- vegetable broth 1 cup
- salt 1 tsp
- cauliflower 2 lbs
- strainer
- butter 1 ½ Tbsp
- pepper
- thyme 1 tsp

- slotted spoon
- food processor

1In a large pot , bring the vegetable broth and salt to a boil. Add the cauliflower ; bring back to a boil. Cover, reduce the heat to low and steam for 15 to 20 minutes , or until cauliflower is very tender.

2Strain the cauliflower using a strainer then use a slotted spoon to transfer the cauliflower to a food processor . Add 3 tablespoons of vegetable broth from the pot, along with the butter . Process until smooth.

3Taste and adjust seasoning with salt and freshly ground pepper . Add thyme and process until just combined.
