- salt 3 pinches
- salt ½ tsp
- pepper 0.12 tsp
- red wine vinegar or fresh lemon juice ¼ cup
- shallot 1 tsp
- prepared mustard ½ tsp
- olive oil ¾ cup

1If garlic flavor is desired, mash to a paste garlic and 2 to 3 pinches of salt .

2Remove to a small bowl . Add salt , pepper , red wine vinegar or fresh lemon juice , minced shallot , and 1/4 to 1/2 tsp prepared mustard .

3Whisk until blended. Add gradually, whisking constantly after each addition olive oil .

4If made in advance, cover and refrigerate. Shake well before using.
