- olive oil 1 Tbsp
- onion 1 cup
- garlic 1 Tbsp
- roasted red peppers 1 24-oz jar
- salt
- pepper

- saucepan
- immersion blender
- fine sieve or a chinois

1In a saucepan , heat the olive oil , when hot add the onion and cook until translucent. Add the garlic , and when fragrant add the roasted red peppers and their juice and cook for 10 to 15 minutes .

2With an immersion blender , process until very smooth.

3Strain through a fine sieve or a chinois and adjust seasoning with salt and pepper .
