Coconut Curried Vegetables with Rice

  • rice 3 cups
  • flour 2 Tbsp
  • curry powder 1 Β½ tsp
  • salt Β½ tsp
  • pepper 0.12 tsp
  • coconut milk 1 14-oz can
  • lime juice 1 tsp
  • frozen vegetables 1 lbs
  • frozen peas 1 cup

  • sauce pan

    While rice is cooking, combine flour , curry powder , salt , pepper , and 1/4 cup coconut milk .

    Beat with wire whisk until smooth. Stir in remaining coconut milk and lime juice . Set aside.

    In a sauce pan , combine frozen vegetables and frozen peas with 1/2 cup water. Cook, then drain and set aside.

    Mix veggies with coconut mixture and bring to a boil.
