- rice 3 cups
- flour 2 Tbsp
- curry powder 1 Β½ tsp
- salt Β½ tsp
- pepper 0.12 tsp
- coconut milk 1 14-oz can
- lime juice 1 tsp
- frozen vegetables 1 lbs
- frozen peas 1 cup

1While rice is cooking, combine flour , curry powder , salt , pepper , and 1/4 cup coconut milk .

2Beat with wire whisk until smooth. Stir in remaining coconut milk and lime juice . Set aside.

3In a sauce pan , combine frozen vegetables and frozen peas with 1/2 cup water. Cook, then drain and set aside.

4Mix veggies with coconut mixture and bring to a boil.
