- laurel leaves 4
- thyme 1 sprig
- spring chicken breasts 4
- salt
- pepper
- butter

1Shove the laurel leaves and thyme under the skin of the spring chicken breasts .

2Add salt and pepper to taste and briefly fry the breasts in the butter .

3Keep the breasts until the dish is served.

4Nicely plate the breast with the tarragon gravy, sweet potato cream and fried shallot.
