  • Microwave
  • large frying pan

    Microwave yellow potatoes until soft.

    Chop onion , zucchini , bell pepper and sautee in large frying pan with coconut oil until soft.

    Add in one block of tofu , diced.

    Pour curry powder liberally all over.

    Chop up the potatoes and add them in.
