Farro salad

  • farro 1 cup
  • bay leaves 2
  • salt 2 tbsp
  • water 2 cups
  • farro
  • bay leaves
  • olive oil 3 tbsp
  • lemon juice 2 tbsp
  • salt
  • pepper
  • farro
  • parmesan cheese Β½ cup
  • arugula 4 oz
  • apples
  • parsley

    Bring farro , bay leaves , salt , water to a simmer for 10 minutes .

    Let farro cool and discard bay leaves .
  3. 3
    In a salad bowl , whisk together olive oil , lemon juice . Add salt and pepper to taste. Add farro and parmesan cheese .
  4. 4
    Just before serving, add arugula , apples and parsley (or mint) to taste.
