- farro 1 cup
- bay leaves 2
- salt 2 tbsp
- water 2 cups
- farro
- bay leaves
- olive oil 3 tbsp
- lemon juice 2 tbsp
- salt
- pepper
- farro
- parmesan cheese Β½ cup
- arugula 4 oz
- apples
- parsley

1Bring farro , bay leaves , salt , water to a simmer for 10 minutes .

2Let farro cool and discard bay leaves .

3In a salad bowl , whisk together olive oil , lemon juice . Add salt and pepper to taste. Add farro and parmesan cheese .

4Just before serving, add arugula , apples and parsley (or mint) to taste.
