- yellow onions 2
- sweet potatoes 560 g
- canola oil 2 tbsp
- dried red lentils 250 g
- coconut milk 480 ml
- tomato paste 8 tbsp
- vegetable stock 1800 ml
- curry powder 2 tbsp
- salt 1 tsp
- ground black pepper 1 tsp
- fresh cilantro 20 g

1Chop yellow onions and cut sweet potatoes into cubes.

2Add canola oil to the saucepan and fry the onions and potatoes on medium-high heat for a few minutes.

3Add dried red lentils , coconut milk , tomato paste , vegetable stock , and curry powder .

4Bring to boil and let it simmer for about 15 minutes .

5Season with salt and ground black pepper .

6Tip! Add some fresh cilantro and fresh chili for more flavor.
