- onion 1
- garlic 2 cloves
- olive oil 2 tbsp
- coconut milk 400 ml
- tomato sauce 400 g
- red lentils 4 dl
- red curry paste 1 tbsp
- salt
- lemon juice 1 tbsp
- spinach 100 g

1SautΓ© onion and garlic in a pot with olive oil until the onion is translucent.

2Add coconut milk and tomato sauce and bring to a simmer.

3Add red lentils , red curry paste , salt to the pot.

4Simmer for about 20 minutes while stirring occasionally, until lentils are tender and breaking apart.

5Add lemon juice and spinach and cook for another 5 minutes until the spinach is wilted.
