Red Curry Lentils

  • onion 1
  • garlic 2 cloves
  • olive oil 2 tbsp
  • coconut milk 400 ml
  • tomato sauce 400 g
  • red lentils 4 dl
  • red curry paste 1 tbsp
  • salt
  • lemon juice 1 tbsp
  • spinach 100 g

    SautΓ© onion and garlic in a pot with olive oil until the onion is translucent.

    Add coconut milk and tomato sauce and bring to a simmer.
  3. 3
    Add red lentils , red curry paste , salt to the pot.
  4. 4
    Simmer for about 20 minutes while stirring occasionally, until lentils are tender and breaking apart.
  5. 5
    Add lemon juice and spinach and cook for another 5 minutes until the spinach is wilted.
