Sauté @onion{1}(diced) and @garlic{2%cloves}(minced) in a #pot with @olive oil{2%tbsp} until the onion is translucent. Add @coconut milk{400%ml} and @tomato sauce{400%g} and bring to a simmer. Add @red lentils{4%dl}, @red curry paste{1%tbsp}, @salt to the pot. Simmer for about ~{20%minutes} while stirring occasionally, until lentils are tender and breaking apart. Add @lemon juice{1%tbsp} and @spinach{100%g} and cook for another ~{5%minutes} until the spinach is wilted.
