  • dried wood ear mushrooms 1 cup
  • garlic 3 cloves // minced
  • red chili peppers 1 // sliced
  • coriander 3 stems // sliced
  • spring onion 1 stalk // finely sliced
  • Chingkiang vinegar 1Β½ tbsp
  • light soy sauce 1 tbsp
  • sesame oil 1 tsp
  • sugar 1 tsp

    Dehydrate the dried wood ear mushrooms for 90 mins. Boil them for 3-4 minutes, then rinse with cold water. Prepare the garlic , red chili peppers and coriander and spring onion . Combine the Chingkiang vinegar , light soy sauce , sesame oil , sugar with the garlic and chili peppers. Combine everything in a bowl and mix, then leave in the frigde. Garnish with coriander and spring onion. Serve with other hot dishes and white steamed rice.
