- garlic 2 clove
- ginger 25 g
- spring onions 3
- peanuts 1 dl
- green beans 300 g
- chili oil 2 tbsp
- brown sugar 2 tbsp
- soy sauce 2 tbsp
- rice vinegar 1 tbsp
- minced beef 500 g
- noodles 300 g

1Peel and finely grate the garlic . Scrub or peel the ginger and grate it on a fine grater.

2Rinse and thinly slice the spring onions on the diagonal. Crush or roughly chop the peanuts .

3Rinse the green beans and trim the ends if fresh. If frozen, thaw them and pat off any excess water.

4Stir together the chili oil , brown sugar , soy sauce and rice vinegar in a bowl.

5Heat a pan over high heat with a little neutral oil and briefly fry the garlic and ginger while the pan comes up to temperature.

6When the garlic sizzles and takes on a little colour, add the minced beef . Fry it hard so it caramelises and do not touch it for the first 30 to 60 seconds so it picks up a golden crust. Once it is caramelised and well browned, about 5 minutes , pour the soy marinade into the pan.

7Cook the noodles according to the packet and add the green beans to the cooking water for the last minute. Save 1 dl of the cooking water.

8Rinse the cooked noodles in cold water so they do not stick together.

9Fold the noodles and green beans into the pan with the beef and marinade. Loosen the consistency with a little of the noodle cooking water.

10Serve the noodles with beef in bowls and top with the sliced spring onions and crushed peanuts.
