- vital wheat gluten 111 g
- all-purpose flour 30 g
- vegetable broth powder 1 tsp
- onion powder ½ tsp
- garlic powder ½ tsp
- salt ¼ tsp
- water 158 ml
- Thai sweet chili sauce 44 ml
- hoisin sauce 44 ml
- soy sauce 30 ml
- water 30 ml
- rice vinegar 15 ml
- sesame oil ½ tsp
- light oil 30 ml
- green onions
- chives
- sesame seeds 1 tbsp

1Add about an inch of water to a pot with a steamer basket and bring to a light boil.

2In the meantime, whisk together vital wheat gluten , all-purpose flour , vegetable broth powder , onion powder , garlic powder and salt in a medium bowl . Pour in water and mix to form a ball of dough.

3Lightly grease the steamer basket, then tear off bite-sized pieces of the seitan dough and place them in a single layer in the basket. Cover and steam for 10 minutes .

4In the meantime, in a small bowl or measuring glass , mix together Thai sweet chili sauce , hoisin sauce , soy sauce , water , rice vinegar and sesame oil . Set aside.

5When the seitan is done steaming, heat light oil in a large skillet or non-stick pan. Use tongs to remove the seitan bites from the steamer basket and place them into the hot oil. Be careful as it may splatter. Cook a few minutes per side

6Remove from the heat, add the sauce and toss to coat. Garnish with green onions or chives and sesame seeds if desired, and serve hot.
