Birthday Buns

🥘 Ingredients

  • butter 125 g
  • milk 2 ½ dl
  • yeast 50 g
  • egg 1
  • sugar 45 g
  • cardamom ½ tsp
  • wheat flour 500 g
  • salt 1 tsp
  • egg wash egg 1
  • water 1 tbsp
  • salt 1 pinch

    Melt butter over low heat in a small saucepan . Take it off the heat and add milk . The mixture should be hand-warm, around 35-37 °C; if it got too hot, let it cool a little.

    Pour the mixture into the stand mixer bowl and dissolve yeast in the liquid. Add egg , sugar and cardamom , and stir the ingredients together.

    Add wheat flour and salt . Knead with the dough hook at low to medium speed for 8 minutes , until the dough is smooth, supple and still soft.

    Cover the bowl and let the dough rise in a warm spot for 25 minutes , until visibly risen.

    Turn the dough out onto a lightly floured surface. Gently gather it and divide it into equal pieces of about 65 g.

    Fold the edges of each piece toward the middle. Turn the seam side down and roll it into a round bun with a smooth, taut surface.

    Place the buns on a baking sheet lined with baking paper, spaced apart. Cover them with a clean tea towel and let them proof for 30 minutes .

    Meanwhile, preheat the oven to 200 °C (fan) or 220 °C (conventional).

    Whisk together egg wash egg , water and salt . Gently brush the risen buns so the air isn't pressed out.

    Bake the buns for 10 minutes to 12 minutes, until evenly golden. Check on them from 10 minutes, since ovens heat differently.

    Transfer the buns to a wire rack and let them cool slightly before serving.
