- red peppers 2
- tomatoes 1 can
- sweet paprika
- cumin
- fine sea salt
- black pepper
- eggs 4
- parsley

While not traditionally Maghrebi, I enjoy a little crumbled feta cheese and some za'atar sprinkled over the shakshuka.

1Heat olive oil in a large frying pan with garlic .

2Add onion and cook until translucent.

3Cut red peppers into thin strips and add them to the pan.

4When the peppers begin to soften, add tomatoes .

5Season with sweet paprika , cumin , fine sea salt , and black pepper .

6Simmer gently until the tomato sauce thickens and the peppers are tender.

7When the sauce has thickened enough, make one small well for each of the eggs and crack them into them.

8Cover the pan and cook until the egg whites are set.

9Finish with parsley and serve immediately, preferably with bread for dipping.
