🥘 Ingredients
- large red bell pepper 1
- extra virgin olive oil 1 tbsp
- large sweet onion 1
- carrots 1 ½ lb
- kosher salt 1 tsp
- Freshly
- garlic cloves 4
- fresh ginger 2 inch
- ground cumin 1 tsp
- smoked paprika 2 tsp
- harissa sauce 3 tbsp
- bay leaf 1
- low-sodium vegetable broth 2 ¼ cup
- good-quality tahini ¼ cup
- lite coconut milk 1
- freshly squeezed lemon juice 1 tbsp
- Garnishes: chopped scallions and/or cilantro

If you are sensitive to spicy food, use less harissa (about 1-2 tbsp instead of 3 tbsp). To make your own “lite” coconut milk, mix together 1 part full-fat canned coconut milk with 2 parts water, stir together until well combined. Then measure out 13 1/2 oz. Storage: Store leftovers in the fridge for up to 4 to 5 days. The soup thickens as it rests, so if you’re serving leftovers, heat it up on the stove with a bit of water or vegetable broth.

1Gather: large red bell pepper , extra virgin olive oil , large sweet onion , carrots , kosher salt , Freshly cracked black pepper to taste, garlic cloves , fresh ginger , ground cumin , smoked paprika , harissa sauce , bay leaf , low-sodium vegetable broth , good-quality tahini , lite coconut milk , freshly squeezed lemon juice , Garnishes: chopped scallions and/or cilantro .

2Roast the bell pepper. Preheat the oven to 400°F / 205°C. Lightly brush a sheet pan with olive oil and place the bell pepper on top. Roast the pepper for 20 minutes , then using a pair of tongs, flip the pepper over and roast for another 20 minutes. Once the pepper is charred in spots, remove from the oven and cover with a glass bowl or place in a resealable plastic bag. Steam the pepper for 15 minutes. Once steamed, roughly slice and remove the seeds.

3While the pepper is roasting, prepare the soup in the Instant Pot. Select the Sauté setting on the Instant Pot. After a few minutes of heating up, add the 1 tbsp olive oil, followed by the onion and carrots, and season with 1/2 tsp of the salt and a few turns of black pepper. Cook the vegetables for 5 minutes , stirring occasionally.

4Add the garlic, ginger, cumin and paprika, and cook for 1-2 minutes , coating the vegetables in the spices. Select the Cancel setting.

5Add the harissa sauce, bay leaf, vegetable broth, tahini, coconut milk, and the remaining 1/2 tsp of salt. Stir to combine.

6Select the Pressure Cook or Manual button at high pressure and set the cook time to 10 minutes. Make sure the sealing vent is set to Sealing.

7Once the timer goes off, perform a quick pressure release by carefully turning the sealing vent from Sealing to Venting. Give the soup a stir and taste for seasonings.

8Transfer half of the soup to a stand blender and add the sliced roasted bell peppers. Blend until the soup is creamy and smooth. Repeat with the remaining soup. Alternatively, you can use an immersion blender to purée the soup directly in the Instant Pot. Add a squeeze of fresh lemon juice, and garnish the soup with scallions and cilantro if desired.
