Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: For more of a Greek salad vibe, add on sliced kalamata olives. For a protein boost, toss some white beans with extra virgin olive oil and lemon juice, and fold into the salad.

1Gather: mixed seasonal tomatoes , Kosher salt or sea salt and freshly cracked black pepper, flat-leaf parsley leaves and tender stems or fresh basil , extra virgin olive oil , best-quality red wine , Toasted Walnuts , Tofu Feta .

2For whole tomatoes, cut some into slices; cut others into wedges or chunks for variety. For cherry or grape tomatoes, cut in half. Arrange the tomatoes on a serving plate, and sprinkle lightly with salt and pepper.

3Chop the parsley or basil.

4Drizzle the olive oil and vinegar over the tomatoes. Taste, adding a bit more vinegar for tang or olive oil for richness. Sprinkle the Toasted Walnuts and chopped herbs on top. Top the salad with the Tofu Feta and a few herb leaves for garnish.
