If your sesame seeds are raw, toast them. Heat a dry frying pan over medium heat. After a minute or two, add the sesame seeds and toast for 2 to 4 minutes, shaking the pan occasionally, until golden brown. Or, add to a rimmed sheet pan and toast in a 350ΒΊF / 175ΒΊC oven for 6 to 8 minutes. Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: Top your salad with shredded carrots, shredded cabbage, or thinly sliced cucumber. For more healthy fats and protein, top with chopped peanuts and/or cashews.

    Peel the citrus, then chop the segments into bite-sized pieces. Cook the edamame using the package instructions, or simply defrost: add to a bowl of hot water and rest until thawed. Drain in a colander and shake to dry.

    Add the lettuce to a large bowl, tearing into small pieces with your hands.

    Toss the lettuce with extra virgin olive oil and vinegar in about a 2:1 ratio until well-dressed to your liking. Season with a pinch or two of salt and pepper.
