🥘 Ingredients
- thinly sliced cabbage labeled “Herby Cabbage Salad” from 6-7 cup
- best-quality champagne vinegar or red wine vinegar 1 tbsp
- Sea
- small English cucumbers or Persian cucumbers 1-2
- of cilantro and/or fresh mint 2 handful
- roasted ¼ cup
- good-quality extra virgin olive oil 1-2 tbsp
- good-quality tahini 1-2 tbsp

Not a fan of cilantro? Simply omit, use more mint, or sub with flat-leaf parsley. I almost always dress my salads with extra virgin olive oil, but if you prefer a more neutral flavor, use a neutral-flavored oil like sunflower oil, avocado oil, canola oil, etc. Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: For added protein, toss in defrosted, shelled edamame. Add more nutrients and color with shredded carrots, sliced radishes, and/or sliced red bell peppers. Shortcut: Skip the fresh mint/cilantro and/or skip the chopped peanuts (or replace them with roasted sesame seeds).

1Gather: thinly sliced cabbage labeled “Herby Cabbage Salad” from , best-quality champagne vinegar or red wine vinegar , Sea salt or kosher salt and freshly cracked black pepper, small English cucumbers or Persian cucumbers , of cilantro and/or fresh mint , roasted , good-quality extra virgin olive oil , good-quality tahini .

2Add the cabbage to a large bowl. Add 1 tsp of vinegar and a pinch of salt. Massage the cabbage with your hands for 30 seconds to slightly soften.

3Finely chop the cucumber. Tear the mint leaves and cilantro (leaves and tender stems) with your hands, or chop them. Chop the peanuts.

4In a serving bowl, combine the cabbage and chopped cucumber. Drizzle on 1 tbsp of olive oil, 1 tbsp of tahini, and 2 tsp of vinegar. Toss with tongs or your hands to combine. Fold in the cilantro, mint, and peanuts.

5Taste, adding more vinegar as desired, and season to taste with salt and pepper. For additional richness, drizzle on more tahini and/or olive oil.
