🥘 Ingredients
- Tangy Citrus Dressing 0.31-0.38 cup
- medium carrots 2
- large English cucumbers ¼
- clementines 1
- soft salad greens or baby kale or crunchy lettuces 4-5 oz
- Kosher
- roasted pistachios or almonds ¼ cup

Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: Add on hemp seeds or pepitas for extra protein. For more variety, top the salad with dried tart cherries or other dried fruit and/or shaved fennel. Shortcut: Skip the carrots and/or cucumber.

1Gather: Tangy Citrus Dressing , medium carrots , large English cucumbers , clementines , soft salad greens or baby kale or crunchy lettuces , Kosher salt or sea salt and freshly cracked black pepper, roasted pistachios or almonds .

2Take the Tangy Citrus Dressing out of the fridge and put it in a bowl of warm water to come to room temperature. Whisk well to re-emulsify.

3Use a box grater, julienne peeler, or sharp knife to grate or julienne the carrots. Slice the cucumber into half moons.

4Peel and segment the citrus. Then, chop each segment in half (or for a regular orange, chop into small pieces).

5In a large bowl, combine the salad greens with a pinch of salt and pepper. Add 5 tbsp of the Tangy Citrus Dressing and toss to coat with tongs or your hands. Add in the citrus pieces, grated carrots, sliced cucumber, and chopped pistachios, and toss again. Add more dressing or salt/pepper as desired.
